In my fish soup recipe I mention the mayonnaise. Some people think its easier to get it from the store. I believe it's easier and healthier to make it home! Here is how:
2-3 egg yolks (organic eggs are the best)
lemon juice of 1 lemon
1 tsp of vinegar
1tsp of sugar
Salt and pepper
1/2 tsp of mustard(powder),
Avocado oil- 1-2 tbsp olive oil
Use a hand blender and start with the egg yolks-1 tsp of vinegar, 1-2 teaspoons of fresh lemon juice, 1/2 teaspoon of mustard powder and last add the avocado oil. Have in mind that the more oil the thicker it becomes.
The vinegar works as antibacterial . You can add a garlic clove for taste and sweet paprika if you like!
The mayonnaise can be stored in the refrigerator up to 1 week.
